How I Make Goat Cheese And Caramelized Onion Pasta

My mom bought and gave me a huge cheese collection when she was on her trip from the Netherlands. She knew how I love cheese! She came home with all sorts of cheeses such as young and aged Gouda, soft-ripened cheese like Brie or Camembert, smoked cheese, spreads, and even a beautiful goat cheese coated in lavender. Since goat cheese tends to have a shorter shelf life compared to the others, I figured I should use it up first. And what better way than to turn it into a pasta dish?

I’ve always loved the combo of goat cheese and caramelized onions. It’s a classic pairing on crostini. The tangy, creamy cheese meets sweet, jammy onions and it just works. So I thought, why not take that flavor duo and toss it with pasta? The result was rich, comforting, and surprisingly elegant. It was a little sweet, a little tangy, very easy to make and perfect for a cozy dinner at home.

1. Prepare all the ingredients needed.

  • linguine / fettuccine / pappardelle pasta
  • goat cheese
  • white onion
  • brown sugar 
  • heavy cream
  • garlic 
  • butter
  • rosemary
  • salt
  • pepper
  • apple cider vinegar 
  • red wine
  • olive oil

2. Boil the pasta. Mine’s already cooked since it was a leftover from our last night’s dinner.

3. Slice the onion and mince the garlic.

4. Saute onion in batter and add brown sugar and apple cider vinegar.

5. In another pan, saute garlic and rosemary in olive oil.

6. Cook cream and red wine. Season with salt and pepper.

7. Mix some grated goat cheese in the sauce.

8. Combine sauce and pasta.

9. Top pasta with caramelized onion and more goat cheese.

10. Your Goat Cheese and Caramelized Onion Pasta is now done and ready to be served.
