How I Make Irish Potato Nachos

For our next cheese dishes episode, I decided to grab the cheddar and make something easy, indulgent, and seriously comforting.

My mom bought and gave me a huge cheese collection when she was on her trip from the Netherlands. She came home with all sorts of cheeses from young and aged Gouda, soft-ripened cheese like Brie or Camembert, smoked cheese, spreads, to a beautiful goat cheese coated in lavender. With so many options to explore, cheddar felt like the perfect match for this fun snack.

If you haven’t heard of Irish Nachos yet, it’s basically nachos but with potato slices or chips instead of tortilla chips. And honestly, it’s a heavenly alternative because who doesn’t love potato chips?

This one’s so easy to whip up. You can fry some potatoes from scratch or just grab a pack of your favorite chips from the grocery. Pile on the cheese and toppings, then dig in. It’s great for snacking, sharing, or just treating yourself.

1. Prepare all the ingredients needed.

  • Potatoes
  • Pork belly
  • Chedar cheese
  • Milk
  • Bell pepper
  • Olive oil
  • Pepper
  • Garlic powder 
  • Salt

2. Wash and cut the potatoes thinly.

3. Spray with olive oil, season with salt and cook potatoes in airfryer for 15 minutes. Flip halfway.

4. While the potatoes are cooking, slice the pork belly into thin pieces and season with salt and pepper.

5. Fry pork belly until toasted.

6. Prepare cheese sauce by melting cheddar cheese in hot milk.


7. Mince the bell pepper.

8. Arrange nachos and top with the prepared ingredients.

9. Your Irish Nachos is now done and ready to be served.
