How I Make Vanilla Cream Custard

Every year, I make sure to have my own contribution every Noche Buena so I decided to have Cordon Bleu and Panna Cotta as my contribution.

Panna Cotta is usually mistaken as gelatin, jelly or pudding. It isn’t even a custard. While panna cotta might be similar to these desserts, they are not the same! To make panna cotta, a cream is sweetened and hardened using gelatin. It differs in the measurement since it is strict on the consistency. The classic panna cotta is infused with vanilla. Its simple but the creamy flavor makes it unique.


1. Prepare all the ingredients needed.

  • 250ml full cream milk
  • 250ml whipping cream
  • 6 tbsp sugar
  • 1 1/2 tbsp gelatin powder
  • 1 tsp Vanilla extract 
  • Fruit puree

2. Combine full cream milk, whipping cream and sugar and let it steam over medium heat until the sugar is melted. Do not boil.

3. Add vanilla extract. I know this should be vanilla pod but we don’t have that here so I apologize.

4. Melt gelatin powder in a small amount of water and add to the mixture.

5. Remove from heat and pour in a molder.

6. Let it rest until it becomes jiggly solid.I was able to make two smaller ones with the mixture I made.


7. Lightly tap the mold to bring out the panna cotta from molder.

8. Top with blueberry puree and berries. Any fruit puree and berry will do.

9. Your Panna Cotta is now done and ready to be served.
