How I Make Indian Spiced Potato Croquette

If there’s one thing I’ll never get tired of exploring, it’s how different cultures turn simple ingredients into irresistible street food. Take Aloo Tikki for example. It’s a classic Indian snack I discovered while watching the “Delhi, India” episode of Street Food: Asia on Netflix. The moment I saw those sizzling golden croquettes being fried up on the streets of Delhi, I knew I had to try making them myself.
Aloo Tikki, which literally means potato patty in English, is a beloved North Indian street food made from mashed potatoes mixed with spices, herbs, and sometimes peas or lentils. The mixture is shaped into patties and shallow-fried until crisp and golden. It’s crunchy on the outside, soft on the inside and bursting with bold flavors that perfectly represent the magic of Indian street eats.
