How To Make Malaysian Lace Pancake

Last time, I told you that I made some Classic Pancakes when Typhoon Kammuri hit and made a landfall in our province. It was terrifying but we couldn’t do something to stop it so I just made something that would make us happy and less stressed. And for us, it is pancake! It was a great snack during the stormy times, together with my Hot Vanilla Chocolate. In fact, I cooked another one, but this time, it’s a Net Pancake. After all, I still have the ingredients with me.

Net Pancake? This bread seems new to our eyes but it wasn’t for the Malaysians, Indonesians and Singaporeans as this is a traditional tea time snack in their countries. Locally known as Roti Jala, this pancakr is usually served with curry dishes. Sometime, it is their alternative to rice. Personally, I like this pancake because of the way it looks. Aside from that, since has more edges than the usual pancake, it has more crispy sides which I can’t resist. Read further to know how this is made.

 

1. Prepare all the ingredients needed. This includes flour, baking powder, salt, turmeric, water, oil, coconut milk, eggs, vanilla and butter.

 

2. Mix two cups of flour, a teaspoon of salt, a teaspoon of turmeric, half teaspoon of baking powder, a cup of water, a teaspoon of oil, a cup of coconut milk, two eggs and half a teaspoon of vanilla. Blend until well incorporated.

 

3. Pour mixture into a pastry bag with a small hole tip. Pastry bag can be replaced with ziplock bag. Just cut a very small hole on its tip.

 

4. Heat pan and wipe small amount of butter into it.

 

5. Do circles and traces into the pan using the bag.

 

6. Your pancake should somehow look like this. It should look like a net pancake, as what its name says. Keep an eye on your pancake because it cooks quick.

 

7. When done, fold net pancake into four.

 

8. It can also be presented by simply rolling.

 

9. Garnish and your Roti Jala is now done and ready to be served.
