Jacket Potato

I’ve always known deep down in my mind that something called “Jacket Potato” existed and I was pretty sure it had to be good. I mean, it’s potato and cheese, how can it not be? But it wasn’t until I stumbled upon SpudBros on TikTok that I truly saw how glorious a fully loaded Jacket Potato could be. Their videos are pure food porn. It had generous scoops of fillings, molten cheese pulls, and those golden crispy skins. Watching them assemble those spuds with so much care and flavor made me want to book a flight to the UK just to try it firsthand.
Jacket Potato is the British version of a baked potato, often served split open with all kinds of savory toppings from tuna mayo to chili con carne. Inspired by SpudBros, I made my own at home and went for a rich and gooey combo of three cheeses: mozzarella, cheddar, and Monterey Jack. I also added baked beans on top. Honestly, I wish someone would sell these beauties along the streets near me. Until then, I guess my oven will do just fine.
1. Prepare all the ingredients needed.
- Potatoes
- Baked Beans
- Cheddar Cheese
- Mozzarella Cheese
- Monterey Jack
- Butter
- Salt
- Olive Oil
- Parsley

2. Wash the potatoes properly and prick them with a fork to allow steam to escape during the cooking process.

3. Rub potatoes with olive oil and salt.

4. Roast this in air fryer for forty minutes. Check at twenty-minute mark to flip.

5. I already grated the three kinds of cheese while the potatoes are cooking.

6. I also heated the baked beans. Anyway, I’m using canned baked beans for this.

7. Cut potatoes to open in quarters.

8. Mash the starch with butter.

9. Top with grated cheese.

10. Pour the baked beans and drizzle with parsley.

11. Your Jacket Potato is now done and ready to be served.
