Tostilocos

Tostilocos is one of those wild, flavor-packed street foods that makes you wonder how did chips get this exciting.

I first learned about it from the Netflix show Heavenly Bites: Mexico, where they featured this snack in an episode that perfectly summed it up: “More than just chips.” And truly, it is. Tostilocos is a glorious chaos of flavors and textures. It usually starts with a base of Tostitos chips, then loaded with things like cucumber, jicama, peanuts, tamarind candy, chamoy, hot sauce, and lime. It’s crunchy, tangy, spicy, sweet, and messy in the best way possible.

For a while, I kept thinking, “Why hasn’t anyone tried doing this in the Philippines?” But just last year, I saw a few vendors experimenting with the concept in Ugbo, Tondo. It finally made it here! Still, I had to make my own version at home but I used Doritos. 

1. Prepare all the ingredients needed. Take note though that I’m not following the traditional toppings of a Mexican Tostilocos.

  • 1 bag of Tostitos or Doritos chips
  • 1/4 kilo ground beef
  • Jicama
  • Cucumber
  • Cheese
  • Tomato sauce
  • Cilantro
  • Hot Sauce
  • Salt
  • Pepper

2. Cook the beef with cilantro and season with salt and pepper.

3. Cut or grate the cucumber and jicama.

4. Open Doritos on one side.

5. Add the grated cucumber and jicama.

6. Scoop in the ground beef.

7. Drizzle with tomato sauce and hot sauce.

8. Grate cheese on top.

9. Your Tostilocos is now done and ready to be served.
