How To Make Irish Potato Fritters

Hail to one of my favorite things in the world – potato! It’s so amazing that we can do a lot of food preparations to this starchy tuberous crop. Nowadays, millennials refer to someone as a potato if they are ugly, strange or fat. Until now, it’s not clear to me why they used the innocent potato as a synonym for those words. But hey, potatoes may be looking dull, uninteresting or boring but they can be anything we want – boiled, fried, baked, mashed, diced, strips, chips, criss-cross, wedges, mojos, fritters, pancake and the like. Now, I’ll make you believe that potato can be a fritter.

The “Dublin” episode of “Somebody Feed Phil” showed me how popular potato fritters or potato pancakes are in Ireland. They are locally called Boxty. It’s their way of utilizing leftover mashed potato and grated raw potato.

3. Grate the onion top of the shredded potatoes or just cut them into small pieces if that’s easier. Set this aside.

4. Get another quarter kilo of potatoes and boil them.

5. Mash the boiled potatoes.

6. Combine shredded potatoes and mashed potatoes. Drizzle with salt and pepper and mix them altogether.

7. Pour in a half cup of olive oil and continue mixing.

8. Once the mixture are well combined, wrap it on a clean cloth and wring it to remove the liquid.

9. Get the molder and put butter on its sides and on the pan. Let’s try to believe that a circle has sides.

10. Place the mixture into the molder and cook until brown.

11. Don’t forget to flip!

11. Your Potato Fritter is now done and ready to be served.
