How I Make Strawberry Meringue Cake

Santa Claus is once again coming to town! This just means preparation of food for Noche Buena!

I don’t want my December 24 today to be like last year. If you would remember, I almost wasn’t able to make a dish for our Christmas Eve because of cooking orders for other families. Today, the rule is not to have work during the holidays and to alot the time with my family.

I plan to make Pavlova, a meringue-based cake, originating in Australia. But my meringue-making skills is so limited. I couldn’t perfect that whipped egg whites. Today, I tried making meringue as base for my Pavlova but it went so messy so I ended up having an Eton Mess, a traditional English Dessert consisting of strawberries, meringue and whipped cream.

  • 4 egg whites
  • 1 cup sugar
  • 1 tsp vanilla essence
  • 2 tsp lemon essence
  • 2 tsp cornstarch
  • Whipping cream
  • Strawberry Jam
  • Strawberries

2. Separate the egg yolks from the whites.

3. Using a mixer, whip the whites until soft peaks form.

4. Gradually, add sugar.

5. Mix in vanilla, lemon and cornstarch and continue whipping. I was close to my desired consistency and then, it overwhipped. Goodbye, Pavlova! But we’ll carry on.

6. Spread this on a pan.

7. Bake in preheated over at 150 degrees for 30 minutes.

8. While our meringue is baking, whip the cream.

9. Slice the strawberries.

10. Since this isn’t a Pavlova anymore, obviously. I just cut this deflated meringue into four and decided to make a layered cake instead.

11. Get the first slice and assemble the cream, strawberry jam and sliced strawberries.

12. Continue doing this to make layers.

13. You Strawberry Meringue Cake is now done and ready to be served. Merry Christmas!
