How I Make Brie Mashed Potato

After more than two decades of existing in the world, I’m now proclaiming that my favorite cheese is Brie! I grew up in a place where processed cheese are frequently used to dishes. Aside from Eden Cheese, we also have parmesan, mozzarella and cheddar. But thanks to this charcuterie board trend, I got to learn more kinds of cheese. This trend made more cheese available in the market. In short, I became in love with Brie!

We still have here a half round from the charcuterie board we had during the recent birthday feast we attended. It is given that Brie can be paired with sweet fruit, jams, unsalted nuts and plain crackers. But aside from these, I learned how it blended so well with potatoes.

Therefore, I made some Brie Mashed Potatoes from the remaining Brie we had here.

  • 1/4 kilo potatoes
  • 75 grams Brie cheese
  • 2 cloves garlic
  • 1/4 stick butter
  • 1/4 cup milk
  • salt
  • pepper
  • nutmeg
  • rosemary

2. Peel garlic and potatoes. Cut potatoes into cubes.

3. Boil potatoes and garlic. I was boiling beef during that time so I decided to boil the potatoes in the same broth. You can do that.

4. Melt butter in milk.

5. Combine boiled potatoes, garlic, milk, butter, salt, pepper, nutmeg and rosemary in a bowl.

6. Mash them together. Use a potato masher if you have. I don’t have so it will be a long hour for me.

7. Cut Brie cheese into cubes.

8. Add cheese into potatoes and continue mashing.

9. Serve with butter, gravy, demi-glace, parsley or all four. Enjoy!
