How I Make Spam Sushi Bake

I told you that last week, Christmas Eve, was quite regretful because of the presence of our new restaurant, we prioritized work over family bonding. We were busy making food for others leaving little preparation time for our own family’s Christmas Eve. It’s sad because I missed the opportunity when the family is together helping each other, cooking and preparing. So I whispered to myself. That’s not gonna happen again, even though we earned quite a lot.

Therefore, on December 31, I opted to sell Blueberry Cheesecakes and other delights that can be prepared ahead of time. I was able to make two dishes for my family’s New Year’s Eve feast.

It’s time to make Pepperoni Pizza Lasagna and Spam Sushi Bake. Yep! It’s the famous quarantine food topped with our well-loved Spam.

1. Prepare all the ingredients needed.

  • 1 can Spam
  • 250 grams cream cheese
  • 1/4 cup Japanese mayo
  • 1 tbsp Sriracha
  • 1/4 cup soy sauce
  • 1 Calamansi
  • 2 tbsps sugar
  • 2 tbsps sesame oil
  • 3 cups cooked rice
  • 1/8 cup rice vinegar
  • Furikake
  • Nori sheets

2. Slice Spam into small cubes.

3. In a bowl, mix softened cream cheese, 1/8 cup Japanese mayo, 1/2 tablespoons Sriracha, soy sauce, calamansi, one tablespoon sugar and one tablespoon sesame oil.

4. Fold in cubed Spam. Leave a few cubes for the toppings.

5. In a separate bowl, combine cooked rice, rice vinegar, a tablespoon of sugar and the rest of sesame oil. The Japanese is gonna hate for this. I’m sorry! I made this sushi with brown rice instead of Japanese rice because mom is in strict brown rice diet. But the process of making is the same with Japanese rice. Of course, it’ll have different texture and flavor.

6. Get your dish pan and grease with sesame oil.

7. Lay the rice mixture at the bottom. Sprinkle some Furikake.

8. Spread the Spam mixture over the rice evenly.

9. Throw some more Spam and Furikake.

10. Bake in the oven for 15 minutes at 175 degrees celsius.

11. Drizzle with more Sriracha and mayonnaise.

12. Your Spam Sushi Bake is now done and ready to be served.
