How To Make Mango Wafer Trifle

As we always say, Christmas is the season of giving, loving, bonding and everything merry. We exchange gifts with our loved ones. We meet with our friends because of the short break from work or school this holiday season gives us. We sing our favorite Christmas carols to our neighbors. We gather our family to welcome the 25th of December together. We attend the night mass to celebrate the birth of Jesus. But we can’t deny that we’re also excited for Christmas because the night before it, which extends until the day itself, is always a feast in every household. Last 2016, I prepared Strawberry and Hazelnut Yogurt Parfait for our Noche Buena while last year, Purple Yam Jam was my contribution. For this year’s Christmas, I made two dishes – German Potato Salad and Mango Wafer Icebox Cake.

I got the inspiration for the Mango Wafer Trifle from the famous Mango Float dessert in our country and from the currently trending Mango Graham Sundae. For those who do not know, Mango Float is the Filipino version of trifle. It is much anticipated by Filipinos during celebrations, parties and feasts. But with Mango Graham Sundae around, we can now have this dessert whenever we want! But since I love experimenting recipes, I used wafer biscuits instead of graham crackers for our Noche Buena. I discovered that it almost has the same flavors but with a twist.

Since it’s the season of giving, let me share my recipe of Mango Wafer Trifle.

2. In a bowl, combine all-purpose cream and condensed milk. I just realized that I have no all-purpose cream in our cupboard so I used Angel Kremdensada instead. It will give the same texture as long as you put the mixture into the freezer for a few hours.

3. Get the mango and grate its flesh.

4. Mix in the sliced mango into the milk mixture leaving a small amount of mango for toppings. Mix them well.

5. For this recipe, I used Nissin wafer but I noticed that it’s thicker than graham cracker. So I reassembled the wafer to achieve the desired thickness.

6. Grab your pan or any container and start layering with the cream at the bottom.

7. Then, arrange a layer of wafer biscuit on top of it.

8. Continue layering alternately.

9. End layering with the cream on top.

10. Top with the rest of the mango slices.

11. Refrigerate.

12. Your Mango Wafer Icebox Cake is now done and ready to be served. Merry Christmas!
